Just as companies like Hallmark transformed Valentine’s Day into a $13 billion business, McDonald’s supersized Shamrock Shake–weighing in at a whopping 820 calories–somehow became synonymous with St. Patrick’s Day. But with just a few ingredients, you can make a delicious vegan shamrock shake in minutes–with ingredients that are actually good for you!
How did McDonald’s supersized concoction–weighing in at a whopping 820 calories–become synonymous with St. Patrick’s Day? Make this healthy vegan shamrock shake instead! To create the vegan shamrock shake recipe below, I found the original on Go Dairy Free and hacked it to include some of my favorite fresh vegetables and herbs. The whole things takes five minutes and is so delicious I want to drink it every day for breakfast! You could also make things even simpler and follow Delicious Living’s easy vegan shamrock shake recipe which features protein powder and mint-flavored supergreens, pictured in the photo above.
1 ripe banana, frozen (or ripe + 3-4 cubes of ice)
1/2 cup (about a handful) spinach leaves
10 mint leaves OR 1/8 teaspoon peppermint extract
1/2 cup sweetened organic vanilla soy or coconut milk
In this order, add spinach, mint (or peppermint extract), avocado, banana (and ice) to your blender, and pour over the milk, then blend for about a minute until the shake is smooth. If it’s too thick, add a little more milk.
So much better than drive-thru, right?
